
Ever since the Dubai chocolate fever broke out, I’ve wanted to create a similar dessert, but I couldn’t find kadayif pastry. To be honest, I didn’t look very hard either.
Recently, just before our trip to Jordan, I came across it in the store and thought, “Now is the perfect time.” I bought it but didn’t have time to prepare it, and then due to the events in the region, we ended up stuck there for a few extra days.
Finally, upon returning home, I came up with this dessert. It’s simple and brilliant: the pistachio and chocolate combo is familiar to most, as pistachio has been a true trendsetter in recent years.
Added to this is the crunchiness of toasted kadayif pastry. In fact, this shift between creamy and crunchy textures is what makes Dubai chocolate special, along with the hype and the illusion of luxury.

It is a rich dessert, so it’s best served in small portions.

Ingredients
- 3.5 oz (100 g) kadayif pastry
- 1.5 tbsp (20 g) butter
- 3.5 oz (100 g) pistachio cream
- 5 fl oz (150 ml) heavy cream
- 1.8 oz (50 g) dark chocolate
- 1.8 oz (50 g) milk chocolate
- 3.5 oz (100 g) cream cheese
For the top
- a few squares of Dubai chocolate
- a handful of natural pistachios

Preparation
- Break the kadayif pastry into small pieces – it’s easiest with scissors – and toast it in butter. Let it cool.
- Heat the heavy cream, add the broken pieces of both chocolates, and stir until melted.
- Once the chocolate is fully melted, set it aside to cool.
- Mix the pistachio cream with the toasted kadayif pastry.
- Whip the cooled chocolate cream until fluffy, then fold in the cream cheese.
- Peel the pistachios and chop them finely.
- Layer the pistachio kadayif and the chocolate cream into cups, repeating the layers.
