
Caprese is a justly famous Italian salad, as simple as it is delicious. The original version features buffalo mozzarella, basil, and tomatoes. Three ingredients representing the tricolor, ideally from Southern Italy.
In my version, I used sheep cheese instead of mozzarella, and the harmony of flavors works perfectly. Do we need anything more in the summer?

Ingredients
- ripe tomatoes
- fresh sheep cheese
- fresh basil
- olive oil
- salt, pepper
Instructions
- I slice the tomatoes and the cheese into even pieces.
- I arrange the tomato and cheese slices alternately on a plate.
- I sprinkle generously with fresh basil leaves.
- I drizzle with high-quality olive oil and finally season with salt and pepper to taste.
- I serve it immediately to enjoy the fresh colors and flavors.
